When visiting Fukuoka, mentaiko is another local food worth trying alongside Hakata ramen, motsunabe and yatai dishes.

Mentaiko is made from pollock roe cured with salt, chilli and other seasonings. It has a rich savoury flavour, saltiness and a distinctive granular texture. Fukuoka is an important birthplace of Japan’s spicy karashi mentaiko culture, with specialist shops and long-established brands throughout the city.

Besides the traditional combination with white rice, people in Fukuoka use mentaiko in ochazuke, French bread, Japanese set meals and even pasta, offering more variety than one might expect.

This article selects five ways to enjoy mentaiko, covering signature dishes, flavours, prices, transport and queuing considerations, from breakfast through dinner.

1. Ganso Hakata Mentaiju: A whole mentaiko served on rice

Mentaiju: White rice and nori in a lacquered box topped with a whole mentaiko, with strips of kombu, white sesame and shiso

Ganso Hakata Mentaiju is one of the representative specialist restaurants for mentaiko dishes in Fukuoka. Located in Nishinakasu, it is known for mentaiko rice and attracts visitors willing to queue specifically for this Fukuoka speciality.

Recommended dish: Mentaiju (mentaiko rice box)

The signature dish places a whole specially seasoned kombu-wrapped mentaiko on hot white rice layered with nori. The kombu adds umami, while the roe has a gentle savoury, slightly spicy flavour. The restaurant’s special sauce makes the taste richer.

The whole mentaiko’s texture is a central attraction. The individual roe grains spread in the mouth with warm rice, retaining their seafood flavour rather than tasting solely spicy.

For a first taste, try it plain before adding small amounts of the special sauce to avoid making it too salty. Diners commonly appreciate the combination of mentaiko and rice, although some consider it expensive and note long queues at busy times.

Besides the basic dish, you can add mentai-sui soup or choose a set including mentaiko dipping noodles.

2. Mentai Cuisine Hakata Shoboan: Mentaiko and sea-bream ochazuke

Mentai-mabushi: Slices of sea bream and a whole mentaiko on rice in a wooden tub, with takana, yuzu, wasabi and dashi

For a more elaborate mentaiko dish, Hakata Shoboan is a distinctive option.

The restaurant is on the Kuten dining floors above JR Hakata Station and is operated by Shoboan, part of the well-known food company Kubara Honke. It specialises in flying-fish dashi mentaiko and Hakata home-style dishes.

Recommended dish: Hakata Mentai-mabushi

This dish combines Fukuoka mentaiko with fresh sea bream, eaten in a style similar to Nagoya’s hitsumabushi eel rice.

Start by tasting it directly to appreciate the saltiness of mentaiko and the delicate texture of sea bream. Then add lemon juice and grated yam for a lighter flavour. Finally, pour in warm Japanese dashi to turn it into a savoury bowl of ochazuke.

The three ways of eating the same dish create different layers of flavour, which many diners appreciate.

Compared with traditional mentaiko rice, Shoboan’s flavours are more delicate, particularly suitable for people who enjoy seafood, Japanese dashi and carefully prepared set meals.

The restaurant’s comfortable setting also suits families or groups of friends. However, its signature dish is relatively expensive, and there may be a wait at busy lunchtime.

3. Hakata Mentaiko Yamaya Shokudo: Set meals with mentaiko and rice refills

Mentaiko set meal: Rice topped with mentaiko pieces and nori, with fried chicken, salad, miso soup and side dishes

Enjoying a substantial serving of mentaiko does not necessarily require an expensive special dish.

A key feature of Hakata Mentaiko Yamaya Shokudo is that, after ordering a set meal, diners can enjoy the restaurant’s karashi mentaiko, white rice and spicy takana pickles, with refills according to appetite.

Located at the MARK IS Fukuoka Momochi shopping mall, the restaurant reopened in June 2025 and focuses on Kyushu-style set meals.

Recommended dish: Grilled salted mackerel and fried chicken set meal

The menu includes different fish dishes, fried chicken and chicken nanban sets. If mentaiko is the priority, choose a main dish you like and pair it with the restaurant’s mentaiko aged for 168 hours.

Mentaiko and freshly cooked white rice are a classic combination. The slightly spicy, savoury roe complements a mouthful of mackerel or karaage fried chicken.

For a more strongly flavoured side, add spicy takana for a different heat and aroma with the rice.

The ability to refill mentaiko and rice is attractive for larger appetites. Take only as much as you can eat to avoid waste.

The restaurant is in a mall near Fukuoka PayPay Dome and can be combined with sightseeing around the Momochi waterfront or stadium.

4. THE FULL FULL HAKATA: Crisp outside, soft inside mentaiko French bread

Mentai France: A long French loaf slit and filled with mentaiko spread, with a sliced portion beside it

Fukuoka mentaiko does not only go with white rice. Combining it with butter and French bread is another memorable preparation.

FULL FULL is a well-known Fukuoka bakery that first introduced its signature Mentai France bread in 2002 and it remains popular.

Recommended dish: Mentai France

The French loaf is made from a specially prepared dough and baked with a crisp exterior and soft, slightly chewy centre, filled with a mentaiko-and-butter mixture.

Mentaiko’s savoury, lightly spicy flavour goes with the rich creaminess of butter and the wheat aroma of the bread. Freshly baked, the crust is crisp and the filling warm, giving a clear contrast in textures.

Many diners recommend eating it soon after buying, because the crust’s crispness changes as the bread cools.

The Hakata shop bakes fresh bread throughout the day and visitors can see the baking process. However, there may be queues at popular times, and seating is limited, so it is not necessarily suited to a long sit-down meal.

If you are heading to Canal City Hakata, you can stop by for a loaf as an afternoon snack.

5. Fukuya Aji no Mentaiko: Traditional Hakata flavour to take home

Fukuya Aji no Mentaiko: Three mentaiko placed side by side on a dark rectangular plate, with pickled takana

If you want to take the taste of Fukuoka mentaiko home after trying local dishes, the long-established Fukuya is an option.

Fukuya was founded in Nakasu, Hakata, in 1948. Its founder, Toshio Kawahara, introduced karashi mentaiko the following year, significantly influencing Fukuoka’s mentaiko food culture today.

Recommended product: Aji no Mentaiko Regular

Traditional mentaiko is valued for the texture of the individual roe grains and the balance between saltiness, umami and heat.

Fukuya’s classic regular flavour can be eaten directly with white rice, without complicated seasoning. For those unused to spicy food, there is also a milder version.

Besides rice, mentaiko can be mixed into pasta or tamagoyaki, or spread with butter on toast to prepare Fukuoka-style dishes at home.

Fresh mentaiko of this type usually requires refrigeration. Before purchasing, consider the return journey and food import rules at your destination. Arrange an insulated bag or cooling packs if necessary.

How to choose mentaiko food in Fukuoka

For a first visit to Fukuoka and a representative mentaiko dish, Ganso Hakata Mentaiju is a suggested choice. For more elaborate Japanese cuisine, consider Shoboan’s sea-bream ochazuke.

If you have a larger appetite and want to enjoy plenty of mentaiko, Yamaya Shokudo is another option. For a light snack, FULL FULL’s Mentai France is recommended.

Finally, if buying fresh mentaiko to take home, consider purchasing it at Hakata Station on your last day, with suitable refrigeration arrangements.

Mentaiko’s appeal is not only its heat but also how the seafood flavour changes when combined with other ingredients. With rice, bread or hot soup, it is worth tasting in different forms.
